Grandma Durbin's Birthday Cake

This cake was made by Grandma Durbin for every birthday. She probably got the recipe from her mother. .
Grandma Durbin's Cake
    The Cake
  • 2 and 1/2 cups of flour
  • 1 cup milk
  • 1 cup sugar
  • 2 eggs
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1/3 cup Wesson oil
  • 1 and 1/2 tsp. vanilla
  • 2 8 inch pans greased, or lined with parchment paper on the bottom

To Make the Cake

In a mixing bowl beat until frothy 2 egg whites while adding 1/2 cup of sugar until the egg whites are stiff and glossy

In another bowl put:

2 and 1/2 cups of flour

1/2 cup of sugar

3 tsp of baking powder

1 tsp of salt

1/3 cup of Wesson oil

1/2 cup of milk

Beat one minute or more if needed

Add 1/2 cup of milk

2 egg yolks

1 and 1/2 tsp of vanilla extract

Beat again until thoroughly mixed.

When thoroughly mixed, fold in egg whites.

Put into two greased 8 inch pans. Bake at 350 degrees for 30 t0 35 minutes or until cake is done.

 

    The Frosting
  • 8 sticks of butter
  • 1 box of powdered sugar
  • 9 eggs separated
  • 1 box of semi-sweet chocolate
  • 3 tsp of vanilla extract

To Make the Frosting

In a pan melt chocolate, stirring while melting.

In a mixing bowl, beat 9 egg whites first and let sit while mixing other ingedients.

In another bowl, cream 8 sticks of butter, 9 egg yolks, 1 box of powdered sugar together. After ingredients are mixed, add melted chocolate and 3 tsp of vanilla. When ingredients are thoroughly mixed, fold in egg whites.

Put frosting in the refrigerator for about 5 to 10 minutes to let cool.

Cut each cake in half. Take frosting out of refrigerator and generously frost each layer.  If it is a little lopsided, don't worry. I have never made a cake that is not.

When you havefrosted the cake, put it in the refrigerator for a couple of hours for the frosting to harden.
